She grows Sidra, a rare and exotic variety believed to have genetic ties to Ethiopian Landrace coffees. Sidra has twice been behind a World Barista Championship-winning coffee, and lots like this one are highly sought-after among roasters worldwide. Paola and her team pick only the ripest cherries by hand.\u003c\/p\u003e\n\u003cp\u003eThe cherries are hand-sorted and floated to remove any low-quality beans, then go through a 30-hour anaerobic fermentation following Cofinet's protocol. This slow process helps build a delicate, crisp and lively character.
