The Borbonera are old Bourbon trees. Despite the development and refinement of many other coffee varieties, Rodolfo Ruffatti chose to preserve those old trees, keeping this "La Bourbonera" lot. The trees are located in the highest point, where coffee trees are less susceptible to diseases and pests.
The trees were originally planted during the time of Rodolfo's great-great-grandfather. However, thanks to a smart pruning technique, the Bourbon trees continue to grow and produce a significant yield. The fact that these trees are still alive and so productive is remarkable.
The La Borbonera trees age is 60+ years, considering the average lifespan of a coffee tree is 30 years - It's astonishing.
The coffee cherries goes through 48 hours anaerobic fermentation. This process enhances the natural sweetness and fruitiness of the cherries. Following that, a dry process on raised African beds continues. Borbonera results a complex cup, with a full, rich, and sweet body. Delicate aftertaste with hints of fermentation. Suitable for delicate alternative brews and espresso alike.
CARE & MAINTENANCE
To keep your coffee beans fresh and flavorful for longer, store them in a cool, dry place away from direct sunlight, humidity, and heat. Always reseal the bag tightly after each use to preserve their aroma and taste. If the bag cannot be properly closed for any reason, consider transferring the coffee to another airtight container or sealed bag.
