This coffee was grown by Jairo Arcila who's a third-generation coffee grower. He is married to Luz Helena Salazar and they have two children together, Carlos and Felipe. They all grow coffee is different lots. The guidance from his sons has empowered Jairo and given him the tools needed to produce fantastic coffees with amazing flavour profiles. He now grows varieties like Pink Bourbon, Java, Papayo ,and Geisha. Besides coffee, Jairo also grows other agricultural products on his farms such as mandarin, orange, plantain, and banana.
This microlot is 100% Castillo variety which was developed by
Federación Nacional de Cafeteros. It is more productive than Caturra
and resistant to coffee leaf rust.
The experimental process:
After the cherries are harvested, they undergo 72 hours of fermentation. During this process, the exotic tropical fruit Lulo (learn more about Lulo here: Wikipedia) is added, infusing the coffee with its signature bright, fruity notes.
Once fermented, the cherries are pulped, leaving the mucilage intact, and are then dried on raised beds to achieve the perfect moisture content.
This meticulous process results in an unforgettable cup of coffee with vibrant tropical flavours and remarkable complexity.
CARE & MAINTENANCE
To keep your coffee beans fresh and flavorful for longer, store them in a cool, dry place away from direct sunlight, humidity, and heat. Always reseal the bag tightly after each use to preserve their aroma and taste. If the bag cannot be properly closed for any reason, consider transferring the coffee to another airtight container or sealed bag.
