Patio Bonito, in Colombia's Cauca region, sits on volcanic ash soil between 1,570 and 1,650 meters above sea level. With heavy rainfall and warm days that cool down at night, the cherries ripen slowly, which helps build up sweetness and complexity.

This coffee comes from Paola Trujillo's farm. She grows Sidra, a rare and exotic variety believed to have genetic ties to Ethiopian Landrace coffees. Sidra has twice been behind a World Barista Championship-winning coffee, and lots like this one are highly sought-after among roasters worldwide. Paola and her team pick only the ripest cherries by hand.

The cherries are hand-sorted and floated to remove any low-quality beans, then go through a 30-hour anaerobic fermentation following Cofinet's protocol. This slow process helps build a delicate, crisp and lively character. After washing, the coffee dries on raised beds for 8 days until it's ready.

The result is a coffee that scored 88.75 points, with notes of caramel, lemongrass, red fruits and tangerine. It's a special, exotic coffee from Colombia.

CARE & MAINTENANCE

To keep your coffee beans fresh and flavorful for longer, store them in a cool, dry place away from direct sunlight, humidity, and heat. Always reseal the bag tightly after each use to preserve their aroma and taste. If the bag cannot be properly closed for any reason, consider transferring the coffee to another airtight container or sealed bag.
