Maracay, in Colombia's Quindío region, sits on volcanic soil between 1,400 and 1,450 meters above sea level. With heavy rainfall and warm days that cool down at night, the cherries ripen slowly, which helps build up sweetness and flavor.
This coffee comes from Luz Helena Salazar's farm. She grows Pink Bourbon, a rare variety known for its pink-red cherries, first found in Colombia around 1980. Luz Helena and her team pick only the ripest cherries by hand.
The cherries are sorted in water to remove any low-quality beans, then go through a 30-hour anaerobic fermentation underwater. This slow process helps build a smooth, balanced flavor. After washing, the coffee dries for 8 days until it's ready.
The result is a coffee that scored 88.5 points, with notes of bergamot, flowers and chocolate. It's a special, exotic coffee from Colombia.
CARE & MAINTENANCE
To keep your coffee beans fresh and flavorful for longer, store them in a cool, dry place away from direct sunlight, humidity, and heat. Always reseal the bag tightly after each use to preserve their aroma and taste. If the bag cannot be properly closed for any reason, consider transferring the coffee to another airtight container or sealed bag. Avoid storing coffee beans in the refrigerator, as the high humidity can affect their quality. For any questions, you can always contact us — we’re happy to help!
